Spinach Pesto

At the grocery store, there are typically a few different types of pesto available for you. However, they're usually too oily, bland, or over-salted. This pesto balances oil, salt, and flavor and is incredibly healthy on top of that. It can be used as a spread for sandwiches, paninis, different meats, veggies, salads, etc. Basically, it has endless preparations that I explore on my blog.

Equipment

  • immersion blender, blender, or food processor

Ingredients
  

  • 1 bag spinach
  • 2-3 tbsp olive oil
  • 2 cloves garlic minced
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 10 basil leaves

Instructions
 

  • Add the spinach, garlic, salt, pepper, basil, and 2 tbs olive oil to a bowl. Blend until smooth, adding olive oil as necessary.
  • Adjust the seasoning as desired and enjoy!
