Roasted Carrots

These roasted carrots are perfectly soft and slightly spicy, making them the perfect side dish for any meal! They're very easy to make, essentially just coating the carrots in lots of olive oil and tons of spices!

Ingredients
  

  • 4 carrots peeled and cut into matchsticks
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp paprika
  • 1/2 tsp red pepper flakes
  • 1/2 tsp cumin
  • 1/2 tsp thyme
  • 1/4 tsp cayenne optional

Method
 

  1. Preheat your oven to 400ºF and line a baking sheet with parchment paper. Spread out your prepared carrots.
  2. Drizzle over the olive oil and sprinkle over all of the spices: salt, pepper, paprika, red pepper flakes, cumin, thyme, and cayenne. Mix well!
  3. Bake for 25-30 minutes until softened completely (use a fork to make sure). Enjoy!
