Lemon Pepper Shrimp

These shrimp are incredibly simple and delicious, with just a few ingredients. They can be ready in less than 20 minutes and take virtually no prep time.
All it takes is some shrimp, peeled or not, up to you, salt, pepper, and lemons. That's actually it. You basically just skewer the shrimp with slices of lemon, season them, then grill them for a few minutes on each side and enjoy!

Equipment

  • 8 wooden skewers
  • cast iron grill

Ingredients
  

  • 2 lb shrimp
  • salt
  • pepper
  • 1 lemon
  • olive oil

Instructions
 

  • Soak the skewers in water for 5 minutes.
  • Prepare the shrimp by peeling them (if you want) and dry them well with a paper towel.
  • Slice the lemon into 1/4" slices, then cut those in half.
  • Divide the shrimp and lemon slices between eight skewers. Skewer them in any pattern you wish.
  • Sprinkle them generously with salt and pepper.
  • Heat the grill to high heat. Brush with olive oil to prevent the shrimp from sticking.
  • Cook the shrimp for about 2 minutes per side, until fully opaque. Enjoy!
