Lemon is one of my absolute favorite flavors, but I often find that lemon desserts are too mild and not lemony enough. These lemon crinkle cookies are so soft, tender, delicious, and best of all, they're packed with fresh lemon flavor. They're so simple to make, and doesn't even take any chilling time. Basically, you make the cookie dough, shape the cookies, roll them in powdered sugar, bake, and then dust with extra powdered sugar! Yum.
Cream together the butter and granulated sugar in the bowl of a stand mixer until light and fluffy, about 2 minutes on medium-high speed.
Add the eggs one by one, then add the vanilla, salt, lemon juice, lemon zest, baking soda, and baking powder.
Add the flour, then mix gently until combined.
Use a spoon or cookie scooper to make tablespoon-sized cookie dough balls. Roll them in your hands then roll them in the powdered sugar. Place them on a parchment lined baking sheet, at least 3 inches apart.
Bake for 9-11 minutes, then let them cool down completely on the baking sheet. Enjoy!
