Method
Dressing
- Combine the ingredients for the dressing: lemon juice, olive oil, mayonnaise, dijon mustard, garlic, salt and pepper to tatse, and sour cream.
Croutons
- Preheat the oven to 400ºF. Use scissors or your hands to cut up or tear up the bread, placing it on a parchment lined baking sheet and baking in the oven for about 8 minutes until crispy.
- Toss the croutons in the olive oil, salt, and pepper to taste.
Salad
- In a small pot, boil water and add the eggs. Boil for 10 minutes, then transfer to an ice bath to stop the cooking.
- In a salad bowl, add the lettuce. Cut the cucumbers into rounds, and chop up the scallions. Add.
- Peel the eggs and chop them up. Add them to the bowl alongside the dressing, croutons, and parmesan. Mix, taste, season to your perference, and enjoy!
