Preheat your oven to 400ºF. Brush your bread slices with olive oil on both sides, then sprinkle evenly with salt and pepper. Then, rub both sides with a peeled garlic clove. Make sure to get the crust too!
Put the bread slices coated in the oil, salt, pepper, and garlic on a parchment-lined baking sheet along with the rest of the garlic cloves (peeled and whole).
Bake in the oven on the bottom rack for 4 minutes, then take it out, flip the bread, and bake for another 2 minutes or until completely toasted.
Then, mince your baked garlic and add it to a bowl with your diced tomatoes, a little bit of olive oil, some salt, pepper, and the basil.
The final step is to top the toasted bread with your tomato mix and drizzle with extra olive oil! Then, garnish with some basil, salt, and enjoy!
