Dad's Charcoal Grilled Filet Mignon

This steak is perfect, it is grilled on charcoal, giving it that delicious smoky aftertaste, and its seasoned to perfection. Best of all, its so simple, requiring just a few basic ingredients and moments of your time!

Ingredients
  

  • 2 6-oz filet mignon steaks about 1" (2.5 cm) thick
  • seasoning of choice Montreal steak seasoning, salt and pepper, or homemade blend (see above)

Instructions
 

  • Trim any excess fat off the steaks and pat them dry.
  • Rub them generously with your seasoning of choice until they are well coated. Set on a plate and cover with plastic wrap, leave them to marinate in the dry rub for 40 minutes.
  • Heat your charcoal grill to anywhere between 300-400ºF.
  • Grill the steaks until medium rare/medium. For 300-350º, grill for about 6 minutes per side. For 400ºF, grill for about 5 1/2 minutes per side.
  • Remove the steaks and let them rest for 10 minutes. Enjoy!
