Cucumber Tomato Feta Salad
This salad is made from crunchy cucumbers, ripe and juicy tomatoes, salty feta, and fresh dill and scallions. So simple, and comes together in 10 minutes max. I love to make this salad to compliment pretty much any meal, it's just so delicious. You can also feel free to sub out the feta with crumbled goat cheese or cotija cheese. I mean, all you have to do is chop up the vegetables, add the feta, and dress it with a few simple ingredients.

- 4 small cucumbers or 1 english cucumber
- 1 1/2 cups cherry tomatoes or a few larger tomatoes
- 2 scallions
- 1/2 cup fresh dill
- 1/2 cup crumbled feta or goat cheese, cotija
- 1 tbsp olive oil
- 1 tbsp lemon juice
- salt
- pepper
Chop up the cucumbers into slices. Half the cherry tomatoes. Thinly slice the scallions (white and green) and roughly chop the dill. Add to a bowl along with the crumbled feta.
Dress with the olive oil, lemon juice, salt, and pepper. Mix gently, and enjoy!
