Method
- Dice the tomatoes roughly, then finely dice the jalapeno, red onion, and cilantro. Set aside.
- In a bowl, mash the avocado until smooth (I use a fork or potato masher).
- Add the tomatoes, jalapeno, red onion, and cilantro you prepared. Then, add the olive oil, lemon juice, salt, and pepper. Mix, adjust the seasoning, and enjoy!
