Classic Guacamole

Guacamole is the most classic, delicious example of how avocados are the best food in the world. No, really. As an avid lover of avocados, I absolutely love this recipe. My classic guacamole is a perfect combination of ripe avocados, sweet tomatoes, red onion, spicy jalapenos, and a simple dressing to finish it off.
The secret is in the salt and the acid, it is the balance of this dish/salad that makes it so unique and yummy! The process is incredibly simple, you just mash up the avocados, add the other components, and finish it off with olive oil, salt, pepper and lemon juice.

Ingredients
  

  • 2 avocados ripe
  • 2 cups cherry tomatoes
  • 1/4 red onion
  • 1/4 cup cilantro
  • 1 jalapeno
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 3/4 tsp salt
  • 1/2 tsp pepper

Instructions
 

  • Dice the tomatoes roughly, then finely dice the jalapeno, red onion, and cilantro. Set aside.
  • In a bowl, mash the avocado until smooth (I use a fork or potato masher).
  • Add the tomatoes, jalapeno, red onion, and cilantro you prepared. Then, add the olive oil, lemon juice, salt, and pepper. Mix, adjust the seasoning, and enjoy!
