Cheesy Broccoli Casserole

This recipe for cheesy broccoli casserole is the perfect combination of broccoli and mozzarella cheese, all mixed with a few other ingredients that give it a great texture. I give tons of helpful tips below and explain all that you need to do to truly appreciate the magical nature of broccoli when prepared correctly.

Ingredients
  

  • 16 oz broccoli florets
  • water for steaming
  • 1 yellow or white onion
  • 1/4 tbsp olive oil
  • 2 eggs
  • 1/3 cup flour
  • 1/3 cup sour cream
  • 1 tsp salt
  • 3/4 tsp pepper
  • 1/4 tbsp butter or nonstick spray
  • 1 cup mozzarella cheese shredded

Equipment

  • 9" round or square casserole dish

Method
 

  1. Preheat your oven to 360ºF.
  2. Saute the onions with the olive oil on medium high heat until transparent and lightly browned.
  3. Steam the broccoli using a steamer for 5-7 minutes. (see alternatives and more explanation above).
  4. Add the steamed broccoli, sauteed onions, eggs, flour, sour cream, salt, and pepper. Mix gently.
  5. Spread the butter into a casserole dish or spray with nonstick spray. Add the broccoli mix and press it down gently.
  6. Bake for 50 minutes, then sprinkle over the mozzarella and bake for 10 more minutes. Slice and enjoy!
