This is a deliciously healthy, gluten free, and vegan rice dish that is super customizable to what you have in your pantry and fridge. My brown rice with chickpeas is exactly what it sounds like: fluffy brown rice packed with roasted chickpeas and fresh scallions. However, you could add other vegetables like carrots and bell peppers to pack in more nutrients!
Preheat your oven to 400ºF and line a baking sheet with parchment paper.
Drain the chickpeas and use a paper towel to slightly dry them. Dump them onto the baking sheet and add olive oil, salt, pepper, za'atar, paprika, cumin, and coriander.
Bake for 30 minutes until crispy. Add the roasted chickpeas to the brown rice, mix, adjust the seasoning, and srpinkle over with scallions to finish. Enjoy!
