As an avid lover of avocado, this super simple avocado and egg mash is great on toast, with meat, in a taco, or simply just as it is! It's pretty much exactly what it sounds like: avocado and egg, mashed and seasoned.
Fill a small pot with enough water so that it will cover the eggs, then bring that water to the boil. Place the eggs in and boil for 10 minutes, then immediately place them in an ice bath to cool. Peel the eggs and add to a bowl.
Half the avocados and remove the pits, then use a spoon to add them to the bowl (without the skin of course). Use a potato masher to mash the eggs and avocadoes together until mostly smooth.
Add the red onion, olive oil, lemon juice, salt, and pepper. Mix and enjoy!
