Roasted Carrots

These roasted carrots are perfectly soft and slightly spicy, making them the perfect side dish for any meal! They’re very easy to make, essentially just coating the carrots in lots of olive oil and tons of spices!

I provide my spice mix below to make these carrots a little bit spicy, including red chile flakes and some optional cayenne. Other than that, just spices you’re pretty much guaranteed to have in your spice cabinet.

Enjoy these carrots with a delicious dinner of mozzarella pesto chicken wraps, smashed potatoes, and rainbow corn avocado salad! Or, switch those up with anything you find on my site!

Ingredients

  • 4 large carrots, peeled and cut into matchsticks
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp paprika
  • 1/2 tsp red pepper flakes
  • 1/2 tsp cumin
  • 1/2 tsp thyme
  • 1/4 tsp cayenne (optional)

Instructions

  1. Line a baking sheet with parchment paper and preheat your oven to 425ºF.
  2. Spread out the carrots, which are peeled and cut into matchsticks, on the baking sheet. Drizzle with olive oil and all of the spices: salt, pepper, paprike, red pepper flakes, cumin, thyme, and cayenne! Mix well.
  3. Bake for 25-30 minutes until softened and slightly browned. Use a fork to test them, it should poke all the way through! Then, enjoy!

  • Preheat your oven to 400ºF and line a baking sheet with parchment paper. Spread out your prepared carrots.
  • Drizzle over the olive oil and sprinkle over all of the spices: salt, pepper, paprika, red pepper flakes, cumin, thyme, and cayenne. Mix well!
  • Bake for 25-30 minutes until softened completely (use a fork to make sure). Enjoy!
