Lemon Crinkle Cookies

Lemon is one of my absolute favorite flavors, but I often find that lemon desserts are too mild and not lemony enough. These lemon crinkle cookies are so soft, tender, delicious, and best of all, they’re packed with fresh lemon flavor.

They’re so simple to make, and doesn’t even take any chilling time. Basically, you make the cookie dough, shape the cookies, roll them in powdered sugar, bake, and then dust with extra powdered sugar! Yum.

Ingredients

  • 1 cup butter, softened and unsalted
  • 1 1/2 cup granulated sugar
  • 2 tsp vanilla extract
  • 2 eggs
  • 2 tsp lemon juice
  • 2 tbsp lemon zest
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 2 1/2 cup all purpose flour
  • 1/2 cup powdered sugar

Instructions

  1. Preheat the oven to 350ºF.
  2. Add the softened butter and granulated sugar to the bowl of a stand mixer. You can also do this by hand but be ready for a little workout. Cream those together for about 2 minutes on medium high speed until the mixture is pale and fluffy.
  3. Add the eggs one at a time, then add the vanilla, salt, lemon juice, lemon zest, baking powder, and baking soda. Mix until combined.
  4. Add the flour and fold gently, making sure to stop mixing just as soon as the cookie dough is combined.
  5. Use a cookie scoop to scoop out a spoonful of cookie dough, then roll in your powdered sugar and place on a parchment lined baking sheet. Make sure the cookies are at least 3 inches apart.
  6. Bake them for 9-11 minutes, then take them out and let them settle and cool completely on the baking sheet. They will end up deliciously soft and tender. dust with extra powdered sugar if you want, then enjoy!
