Homemade Spinach Pesto

At the grocery store, there are typically a few different types of pesto available for you. However, they’re usually too oily, bland, or over-salted. This pesto balances oil, salt, and flavor and is incredibly healthy on top of that. It can be used as a spread for sandwiches, paninis, different meats, veggies, salads, etc. Basically, it has endless preparations that I explore on my blog. This is one of the keystone recipes that I can put together in about 5 minutes and serves as the basis for so many delicious recipes.

Ingredients:

  • 1 bag spinach
  • 2-3 tbs olive oil
  • 2 cloves garlic
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 5-10 large basil leaves (optional)

Instructions:

  1. To prepare, mince or thinly slice the garlic. Wash and dry the spinach and basil. Then, place all of those ingredients as well as 2 tbs olive oil, salt, and pepper into a bowl (in preparation of using an immersion/stick blender), a regular blender, or a food processor.
  2. Pulse/blend until a smooth consistency is reached. Taste the pesto. If you like a little bit more salt, add some (or add some parmesan alternatively). If it’s too salty for you, you can add a little extra oil and/or lemon juice to help balance it. That’s it! Enjoy!

Equipment

  • immersion blender, blender, or food processor

Ingredients
  

  • 1 bag spinach
  • 2-3 tbsp olive oil
  • 2 cloves garlic minced
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 10 basil leaves

Instructions
 

  • Add the spinach, garlic, salt, pepper, basil, and 2 tbs olive oil to a bowl. Blend until smooth, adding olive oil as necessary.
  • Adjust the seasoning as desired and enjoy!
