Homemade Caesar Salad

Caesar salad is one of those things that is just so so much better when you make it at home. You get to make your own creamy dressing, and cut up the salad ingredients to your own preference! Best of all, crunchy croutons can be seasoned to perfection and you can add tons and tons of parmesan.

This is one of the simplest recipes, you basically just make the dressing, cut up the salad ingredients, and add the croutons and parmesan! Then, mix gently until the salad is all combined. Trust me, this salad is the best version of the classic.

I love to enjoy this salad for dinner with my mozzarella pesto chicken wraps and my oven roasted spiced potatoes or smashed potatoes. It also goes great with this lemon dijon salmon or my dad’s charcoal grilled filet mignon!

Ingredients

Dressing:

  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 2 tbsp mayonnaise
  • 1 tbsp dijon mustard
  • salt
  • pepper
  • 1 clove garlic, crushed or minced
  • 1/2 cup sour cream

Croutons:

  • 4-5 slices of bread of choice, (I like baguette or sourdough, I’ll use about 1/4 of the bread)
  • 1/2 tbsp olive oil
  • salt
  • pepper

Salad Ingredients:

  • 4 cups romaine lettuce, shredded or cut up
  • 4 Persian cucumbers, or 1 English cucumber
  • 3 scallions
  • 4 eggs
  • water for boiling the eggs
  • 2 cups croutons
  • 1 cup dressing
  • 1/2-3/4 cup parmesan (by preference)

Instructions

Dressing:

  1. Mix together all the ingredients: lemon juice, olive oil, mayonnaise, dijon mustard, garlic, and sour cream. Season with salt and pepper to taste.

Croutons:

  1. Preheat the oven to 400ºF. Using scissors or your hands, cut or tear up the bread into crouton-sized chunks.
  2. Place on a parchment lined baking sheet and bake for 8-10 minutes. Let cool, then toss in the olive oil, salt, and pepper.

Salad:

  1. Boil a small pot of water. Add the eggs, and boil for 10 minutes. Immediately, place them into an ice bath to stop the cooking process.
  2. Meanwhile, add the shredded or sliced lettuce into a salad bowl. Slice the cucumbers into rounds, then chop up the scallions. Add to the bowl.
  3. Peel the eggs and cut into small chunks, adding to the bowl. Then, add croutons, dressing, and parmesan (to your taste). Mix, and season as necessary with alt and pepper. Enjoy!

Croutons

  • Preheat the oven to 400ºF. Use scissors or your hands to cut up or tear up the bread, placing it on a parchment lined baking sheet and baking in the oven for about 8 minutes until crispy.
  • Toss the croutons in the olive oil, salt, and pepper to taste.

Salad

  • In a small pot, boil water and add the eggs. Boil for 10 minutes, then transfer to an ice bath to stop the cooking.
  • In a salad bowl, add the lettuce. Cut the cucumbers into rounds, and chop up the scallions. Add.
  • Peel the eggs and chop them up. Add them to the bowl alongside the dressing, croutons, and parmesan. Mix, taste, season to your perference, and enjoy!
