Garlic Dill Potatoes

As a lover of potatoes and a love of garlic, this recipe is absolutely delicious. These garlic dill potatoes are delicious with the garlic and fresh dill, all while being seasoned heavily. Best of all, they’re incredibly easy to make.

Basically, you’re going to boil the potatoes then stir them up with some olive oil, butter, garlic, dill, and some other seasonings. This is a classic recipe, and is so so easy. It’s essentially just two steps.

When you’re doing this recipe, the most important thing is the quality of the ingredients. Try to find some younger fresh garlic (it’ll actually be pink funnily enough) and fresh dill. Frozen dill will work just fine if that’s all you have, though. As for potatoes, I use little potatoes! You can cut up bigger potatoes here, although I recommend a waxier potato rather than a starchy one. So, red potatoes over russet potatoes. The other ingredients are basically just pantry staples.

Ingredients

  • 1 1/2 lbs small potatoes
  • water for boiling
  • 1 1/2 tsp salt plus more
  • 10 cloves garlic, finely minced/crushed
  • 3/4 cup dill, finely chopped
  • 4 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp black pepper

Instructions

  1. In a large pot, add the potatoes and cover with water. Then, add in a generous pinch of salt (about a teaspoon). Bring the water to a boil and then cook the potatoes for about 20 minutes until fully softened.
  2. Drain out the water and add the rest of the ingredients: salt, pepper, garlic, dill, butter, and olive oil. Mix with a spoon, allowing the skins t listen and it becoming slightly mashed. That’s it! Enjoy!

Ingredients
  

  • 1 1/2 lbs small potatoes
  • water for boiling
  • 1 1/2 tsp salt plus more
  • 1 tsp black pepper
  • 10 garlic cloves finely minced or crushed
  • 3/4 cup dill finely chopped
  • 4 tbsp butter
  • 1 tbsp olive oil

Instructions
 

  • In a large pot, add the potatoes and enough water to cover. Add a generous pinch of salt. Once the water is boiling, cook for roughly 20 minutes.
  • Once the potatoes are fully softened, drain the water and add the rest of the ingredients: salt, pepper, garlic, dill, butter, and olive oil. Enjoy!
