Cucumber Tomato Feta Salad

Salads are pretty underrated. And no, I’m not talking about the bland bowls of lettuce, which taste like pretty much nothing. No, I’m talking about salads, loaded with various textures of vegetables, cheese, healthy fats, and protein. This salad is made from crunchy cucumbers, ripe and juicy tomatoes, salty feta, and fresh dill and scallions. So simple, and comes together in 10 minutes max.

I love to make this salad to compliment pretty much any meal, it’s just so delicious. You can also feel free to sub out the feta with crumbled goat cheese or cotija cheese. I mean, all you have to do is chop up the vegetables, add the feta, and dress it with a few simple ingredients.

Salads don’t get easier, fresher, and better seasoned than this one, I’d definitely recommend giving it a shot for dinner today or tomorrow.

Ingredients:

  • 4 small cucumbers, or 1 english cucumber
  • 1 1/2 cups cherry tomatoes
  • 2 scallions
  • 1/2 cup fresh dill
  • 1/2 cup crumbled feta
  • 1 tbsp olive oil
  • 1 tbsp lemon juice, about 1/4-1/2 lemon
  • salt
  • pepper

Instructions:

  1. Cucumbers: Depending on what you prefer, cut into rounds or cut in half and cut into thin semicircles. For an english (large) cucumber, cut into quarters lengthwise and cut slices. Add to a bowl.
  2. Tomatoes: For cherry tomatoes, cut in half. For larger tomatoes, cut into bit sized pieces. Add to the bowl.
  3. For the scallions, slice the entire scallion (both the green and white parts) thinly, and add to the bowl. Roughly chop the dill and add.
  4. Add the crumbled feta. Then, dress the salad by adding the olive oil, lemon juice, salt, and pepper. Mix gently, and you’re done! Enjoy!

Ingredients
  

  • 4 small cucumbers or 1 english cucumber

  • 2 scallions
  • 1/2 cup fresh dill
  • 1/2 cup crumbled feta or goat cheese, cotija
  • 1 tbsp olive oil
  • 1 tbsp lemon juice

Instructions
 

  • Chop up the cucumbers into slices. Half the cherry tomatoes. Thinly slice the scallions (white and green) and roughly chop the dill. Add to a bowl along with the crumbled feta.
  • Dress with the olive oil, lemon juice, salt, and pepper. Mix gently, and enjoy!
