Cheesy Broccoli Casserole

Broccoli is not always good, it can be bland, mushy, and grievously underseasoned. This recipe for cheesy broccoli casserole is anything but that, it’s the perfect combination of broccoli and mozzarella cheese, all mixed with a few other ingredients that give it a great texture. I give tons of helpful tips below and explain all that you need to do to truly appreciate the magical nature of broccoli when prepared correctly.

Most importantly, make sure that the broccoli you pick looks fresh. It shouldn’t be brown and wet, as that’s always a bad sign.

The process itself it simple, you steam the broccoli and saute some onions, then combine the other ingredients and bake in a casserole dish. Finally, you top it with lots of deliciously melty mozzarella cheese that brings the dish to a whole new level.

I like to enjoy this casserole with my dad’s grilled meat, you can try his charcoal-grilled filet mignon and pork rib chops. Otherwise, it’s a great vegetarian and healthy option for a side dish!

Ingredients

  • 16 oz broccoli florets (1 large head of broccoli)
  • water (to steam the broccoli)
  • 1 medium yellow/white onion
  • 1/4 tablespoon olive oil
  • 2 eggs
  • 1/3 cup flour
  • 1/3 cup sour cream
  • 1 tsp salt
  • 3/4 tsp pepper
  • 1/4 tbsp butter or nonstick spray
  • 1 cup mozzarella

Instructions

  1. Preheat your oven to 360ºF.
  2. Roughly dice the onion and saute it on a pan with the olive oil until it is translucent and lightly browned.
  3. Using a steamer, steam the broccoli for 5-7 minutes until slightly softened. This will improve the texture of the broccoli in the casserole. You can also blanch the broccoli in boiling, salted water for 4-5 minutes.
  4. In a bowl, combine the steamed broccoli, sauteed onions, eggs, flour, sour cream, salt, and pepper.
  5. In a casserole dish, spread the butter or spray with nonstick spray. Add the whole mixture into the casserole dish and gently press it down.
  6. Place the dish in the oven and bake for 50 minutes, then add the cheese over top and bake another 10 minutes. Slice and enjoy!

Ingredients

  • 1/4 tbsp olive oil

Instructions
 

  • Preheat your oven to 360ºF.
  • Saute the onions with the olive oil on medium high heat until transparent and lightly browned.
  • Steam the broccoli using a steamer for 5-7 minutes. (see alternatives and more explanation above).
  • Add the steamed broccoli, sauteed onions, eggs, flour, sour cream, salt, and pepper. Mix gently.
  • Spread the butter into a casserole dish or spray with nonstick spray. Add the broccoli mix and press it down gently.
  • Bake for 50 minutes, then sprinkle over the mozzarella and bake for 10 more minutes. Slice and enjoy!
