Brown Rice With Chickpeas

This is a deliciously healthy, gluten free, and vegan rice dish that is super customizable to what you have in your pantry and fridge. My brown rice with chickpeas is exactly what it sounds like: fluffy brown rice packed with roasted chickpeas and fresh scallions. However, you could add other vegetables like carrots and bell peppers to pack in more nutrients!

In this recipe, I use 3 cups of cooked brown rice. You could also use basmati rice or any other alternative you have. This is great to transform leftover rice, or you could just prepare rice according to the instructions on the package.

Essentially, I roast the chickpeas with some delicious Mediterranean spices and then add them to the prepared rice with additional salt, tons of scallions, and crushed black pepper.

This rice is great with any of these delicious meat options: charcoal-grilled steak, grilled pork chops, and mozzarella pesto chicken wraps. Or, make your dinner totally vegan: add some crispy tofu and more veggies!

Ingredients

  • 3 cups cooked brown rice
  • 1 can (15 oz) chickpeas
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp za’atar seasoning
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • 1/2 cup chopped scallions

Instructions

  1. Preheat your oven to 400ºF and line a baking sheet with parchment paper. Drain the chickpeas (reserve the aquafaba, chickpea liquid, if you want) and dry them off with a paper towel.
  2. Dump them out onto the baking sheet and add the olive oil, salt, pepper, za’atar, paprika, cumin, and coriander. Bake for 30 minutes until golden and crispy.
  3. Add the roasted chickpeas to the cooked rice, mix, adjust the seasoning with salt and pepper, and sprinkle over the scallions. Enjoy!
