Avocado and Egg Mash

As an avid lover of avocado, this super simple avocado and egg mash is great on toast, with meat, in a taco, or simply just as it is! It’s pretty much exactly what it sounds like: avocado and egg, mashed and seasoned.

I can remember my mom making this from when I was very little since it’s super healthy and super satisfying (it’s packed with healthy fats from the avocado and egg yolk and protein from the egg white). My favorite way to eat it is on toast, of course, with some smoked salmon and everything-but-the-bagel seasoning from Trader Joe’s. But you could honestly just eat it in any form; it’s that good.

Ingredients

  • 4 eggs
  • 3 medium avocados
  • 1/2 red onion
  • 1 tsp salt
  • 1-2 tbsp olive oil
  • 1/2 lemon, juiced
  • 1/2 tsp pepper

Instructions

  1. Fill a small pot with enough water so that it will cover the eggs, then bring that water to the boil. Place the eggs in and boil for 10 minutes, then immediately place them in an ice bath to cool.
  2. Peel the eggs and add to a bowl. Half the avocados and remove the pits, then use a spoon to add them to the bowl (without the skin of course). Use a potato masher to mash the eggs and avocadoes together until mostly smooth.
  3. Add the red onion, olive oil, lemon juice, salt, and pepper. Mix and enjoy!

  • 1 tsp salt
  • 1-2 tbsp olive oil
  • 1/2 lemon juiced
  • 1/2 tsp pepper
