Mango Avocado Salsa

This refreshing salsa is the perfect side to any meal, and also works great as an addition to tacos, wraps, whatever! I love the combination of rich, creamy avocado with the sweet mango, it’s simply delicious.

This salad is super simple to make and has only the best and freshest ingredients. It balances sweet, creamy, spicy, and refreshing all in one bite.

Ingredients:

  • 2 medium, ripe avocados
  • 1 ripe mango
  • 1 jalapeno
  • 1/4 red onion
  • 1/2 cup cilantro (about a handful)
  • 1/2 – 1 tbs olive oil
  • 1/4 lemon (about 1-2 tbsp juice)
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions:

  1. Prepare the components of the salad. Starting with the mango, give it a good rinse and dry it off to remove dirt. Then, use a knife or peeler to remove the skin. Cut off the very top and bottom (lengthwise) of the mango to help it stand up. Using a knife, cut down the mango close to the core to get as much off as possible. Then, cut those pieces into relatively big chunks, about 1/2 – 1 inch. Really, you’re looking for pieces slightly smaller than bite sized. Add to a bowl.
  2. For the avocado, cut it in half lengthwise and remove the pit. Without removing it from the skin, use a sharp knife to score the avocado all the way down to the skin but not through. You should essentially be creating a bunch of scores vertically and then horizontally, so when you remove it the pieces will already be good to go. Once you complete this, use a spoon to scoop the avocado out. Another alternative is to scoop out the avocado carefully first and then cut it into chunks the same size as the mango. Add to the bowl.
  3. For the other components, you are looking for a fine dice. Very finely dice the red onion and the jalapeno, and roughly chop the cilantro. It doesn’t have to be perfect but try your best for a more uniform salsa. Add all of those to the bowl.
  4. To dress the salad, add about 1/2 to 1 tbs of olive oil (I use about 3/4 tbs), lemon juice, salt, and pepper. Using a spoon, gently toss the salad to coat and mix all the components, but be careful not to smash up the avocado pieces. Enjoy!

Notes:

  • Don’t stress too much about the perfect cuts on the different veggies and fruit, remember that it will taste delicious even with some nonuniform pieces! I always try my best but don’t completely get it perfect.
  • Have this with wraps, tortilla chips, and tacos, or just enjoy it as a side salad for dinner! Honestly, it’s even good enough to eat by itself.

Ingredients
  

  • 2 avocadoes medium, ripe

  • 1/4 lemon juice, about 1-2 tbsp
  • 1/2-1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions
 

  • Starting with the mango, remove the skin and cut the mango into bite sized pieces (making sure to avoid the tough core in the center). Add to a bowl.
  • Cut the avocadoes in half, remove the pits, and scoop them out of the skin carefully. Cut into bite sized pieces and add to the bowl.
  • Finely dice the jalapeno and red onion. Roughly chop the cilantro. Add to the bowl.
  • Dress the cut up salsa with the olive oil, lemon juice, salt, and pepper. Mix gently so as to ensure you aren't breaking up the avocado. Enjoy!

Notes

  • Try to get the freshest ingredients for this, as they will make the salsa stand out! Also, don’t worry too much about the cuts of the fruit and veggies, just try your best for a more even salsa. 
  • Eat this with any meal, but this goes great with tacos, wraps, and spicy meats! One of my favorite combinations is this salsa with grilled pork ribs.
