Lemon Pepper Shrimp
These lemon pepper shrimp are incredibly simple and delicious, with just a few ingredients. They can be ready in less than 20 minutes and take virtually no prep time.
All it takes is some shrimp, peeled or not, up to you, salt, pepper, and lemons. That’s actually it. You basically just skewer the shrimp with slices of lemon, season them, then grill them for a few minutes on each side and enjoy!
These shrimp are a great meal for any time of the year, but they’re especially good during summer, being nice and refreshing! They’re a great balance between salt and acid. Without further ado, get ready for the easiest shrimp recipe in the world.
Ingredients:
- 2 lb shrimp
- salt
- pepper
- 1 lemon
- olive oil, to brush onto the grill
Instructions:
- Soak your skewers in water for 5 minutes. This will prevent the wood from burning when you grill the shrimp.
- Prepare your shrimp. It’s honestly up to you whether you’d like to peel your shrimp or not, but I find that they’re easier to eat when they aren’t peeled. However, I can’t discount the fact that the shell imparts a lot of flavor into the shrimp. Whatever you choose, make sure they are fully dried (with a paper towel) before skewering.
- Slice the lemon into 1/4″ slices, then cut those slices in half.
- Divide the shrimp and lemon slices equally between 8 skewers. Skewer the shrimp and lemons in any pattern you desire, I usually do 4-5 shrimp and alternate lemon slices. See the photo for an idea.
- Sprinkle with salt and pepper generously.
- Heat up your grill to high heat, I like to use my cast iron grill pan. Pour on a little bit of olive oil so the shrimp don’t stick.
- Cook the shrimp for about 2 minutes per side, or until they’re fully opaque. Enjoy!
