Herby Cucumber Salad

With tons of fresh cucumbers and herbs, this herby cucumber salad makes a healthy and refreshing salad that goes great with every meal! It’s super simple, essentially depending on what herbs you have in the fridge.

Essentially, you slice cucumbers and chop the herbs and scallions. Then, add feta and dress simply with olive oil, salt, and pepper. You could always add chicken or tofu to this to make it a full meal.

Ingredients

  • 2 persian cucumbers
  • 3 scallions, chopped
  • 1/4 cup chopped basil
  • 1/4 cup chopped parsley
  • 1/4 cup chopped dill
  • 2 tbsp chopped fresh oregano
  • 2 tbsp olive oil
  • 1/2 cup feta
  • 1/2 tsp salt
  • 1 tsp pepper

Instructions

  1. Slice the cucumbers and add to a bowl along with all the chopped herbs and scallions. Feel free to customize with the herbs depending on what you have!
  2. Add the feta and dress with olive oil, salt, and pepper. So simple, enjoy!
